3/4 c Grapefruit juice
Sift flour, salt, soda and baking powder together. Cream shortening with grapefruit rind and sugar until fluffy. Add whole eggs and yolk, one at a time, beating thoroughly after each is added. Add sifted dry ingredients and juice alternately in small amounts, beating well after
each addition. Pour into greased pans and bake in a 350 degree oven for
30 to 35 minutes. Makes 3 ( 9 inch) layers.

Grilled Angel Food Cake with Nectarines & Blueberries
Yield: 6 Servings
6 Ripe nectarines
3 T Powdered sugar Grated zest of 1lemon Juice of 1/2 a lemon
6 sl Angel food cake
1pt Fresh blueberries
Prepare grill & cover to build an intense heat. Remove nectarine pits
& slice each one into 6 slices. Combine sugar, zest, lemon juice in a
small bowl. Place 6 nectarine slices on a skewer & place on grill. Cook 5 minutes, turn & baste with glaze. Cook & baste for another 7 minutes.
When fruit is just about done, toast cake slices on a cooler part of the grill, turning once. Serve toasted cake with grilled nectarines & handfuls of blueberries.

Gumdrop Cake
Yield: 1Serving
3 c Sifted cake flour 1t Baking soda
1t Salt
1tC:innamon
1c Shortening
1c Brown sugar
2 Eggs, well beaten
1c Sweetened applesauce
2 c Seedless raisins
1lb Gumdrops (assorted) all

Colors except black ones) Cut into pieces with Scissors
Sift flour, soda, salt and cinnamon together 3 times. Cream shortening with sugar until fluffy. Add eggs and beat thoroughly. Add 1cup dry ingredients and blend; add applesauce, raisins and remaining dry ingredients; mix thoroughly. Mix in gumdrops. Turn into tube pan lined with greased paper. Bake in a 300 degree oven for 2 to 2 1/2 hours. Makes 1(9 inch) cake.
Ham and Potato Pancakes
Yield: 8 Servings
3lg Potatoes, peeled, grated, Well drained (about3 cups) 1c Chopped cooked ham
1/3 c Chopped chives or green
Onions
1/4 c Chopped fresh parlsey
1Egg
2 TAll purpose flour
3 TVegetable oil
Combine first 6 ingredients in medium bowl. Season with salt and pepper.
Heat 3 tablespoons oil in heavy large skillet over medium heat. Using
1/4 cup batter for each pancake, fry batter in batches until cooked through and golden brown, adding more oil if necessary, about minutes
per side.
Transfer pancakes to paper-towel-lined baking sheet to drain briefly.
Hawaiian Cake
Yield: 15 Servings 270
1package Yellow cake mix
1c Cold milk
1package
-Cool whip, 9 oz,thawed
1/2 c Chopped nuts (optional)
1/2 c Flaked coconut
1package Instant vanilla
- pudding 5 oz
1package Cream cheese,
-softened
1en Crushed pineapple
-(drained)
1en Marachino cherries,
-chopped
Prepare cake mix according to the directions on the box. Pour batter into greased 15"x 10" pan. Bake at 350* for 15-20 minutes. Let it get cold in pan. Blend pudding mix with milk. Beat cream cheese into pudding mix until smooth. Then stirring by hand, fold in thawed cool whip. Spread pudding on top of cake. Top with crushed pineapples (20 oz. can). Sprinkle with nuts, then cherries (small jar of cherries cut
into small pieces), and last with coconut.
